Sustainable cultivation of the vines, low yields, hand-picking, and a rigorous selection of the best grapes from vineyards in hilly locations form the basis for top quality. The grapes are dried for around 100 days and lose up to 40% of their original weight, which results in a natural concentration of the ingredients. This traditional process requires a lot of sensitivity and experience. This makes the wine more complex.
