Indeed, with this BIO project, Leonardo Pizzolo has achieved great success.  The technique of "appassimento" [drying] is ancient, reduces the weight by approx. 30% and leads to a natural concentration. The unique thing is that only organically grown grapes are processed. These ripen in the middle of the national park of  Abruzzo.
